Green Leaves with Grilled Goat CheeseHojas verdes con queso de cabra gratinado
Servings: 4 Prep Time: 20 min. Cook Time: 5 min. Ingredients:11 oz goat cheese 1 tbsp oil 1 bag baby green leaves Vinaigrette: 1/2 cup virgin olive oil 3 tbsp sherry vinegar 1 tbsp honey Salt Pepper Preparation:Vinaigrette: Dissolve the salt, pepper and honey in the vinegar and beat in the virgin olive oil until an emulsion forms. Cut the cheese into 3/4 inch slices and grill until golden. Place on plates, add the salad and dress with the vinaigrette. Recipe courtesy of Spain GourmeTour magazine.
