Prepare some Manchego-stuffed piquillo peppers
Insert small wedges of Manchego cheese into fire-roasted piquillo peppers - it's easy to do since they're essentially the same shape. Warm up a little olive oil in a frying pan and cook the peppers over medium heat until they are nice and warm. Since it's a hard cheese, the Manchego will not fully melt, but the flavors will meld beautifully.
