The artisans at La Antigua blend fresh sheep’s milk with pimienta rosa flakes to create a rich, aromatic cheese with just a touch of spice. Aged less than 30 days, the cheese is meltingly soft at room temperature. The mild young cheese is delicious with crackers, paired with a glass of fine wine.
Pimienta rosa, or pink pepper, is an exotic spice from South America. It has a bright floral aroma and a very mild, pleasant piquancy. It is the perfect pairing for this smooth, mild sheep’s milk cheese.
The cheesemakers at La Antigua use milk from sheep that forage the local countryside, munching on wild herbs and grasses near the small town of Fuentesaúco, located between Zamora and Salamanca. Because this cheese is aged such a short time it is pasteurized. It is also naturally lactose free.
