The shank of the Jamón Ibérico contains some of the most flavorful meat on the ham. This piece is a combination of bone, ham and fat that will serve as a succulent addition to your Spanish-inspired cuisine. Cut slices of meat to serve alongside cheese and olives, then use the bone and scraps to make unbeatable stock or beans.
The best flavor for soups and stews builds up over time. Adding this traditional Spanish ham to your cooking pot will ensure a welcome transfer of succulent richness as your dish cooks. Deep red in color and marbled with fat, Jamón Ibérico is made from the unique breed of Spanish black Ibérico pigs found only in Spain. Each Ibérico ham is cured for over two years in cool, dry mountain air.
Jamón Ibérico comes from the same genetic stock as the famed Jamón Ibérico de Bellota hams. The only thing that distinguishes this variety from its more renowned cousin is the diet. The pig from which Jamón Ibérico is derived does not graze on a full diet of acorns like the Ibérico de Bellota variety. However, this meat is as close to the prized acorn-feeding pork that you can get. It has the same unique flavor, yet is a bit more affordable.
Every week we meticulously slice Ibérico ham in our state-of-the-art, USDA-inspected facility, ensuring that the jamón arrives to you at the highest level of freshness. The Jamón Ibérico shank is fully cured and ready to eat. Keep refrigerated and use within a week of opening.
