Free-range, Acorn-fed Cured Sausage

This delicious sausage is made with acorn-fed pork from special Ibérico pigs and aged for over two months. The resulting salchichón is packed with complex flavors. Serve thin slices on a warm plate and the antioxidant rich fat will literally start to melt!

Ibérico de Bellota salchichón is seasoned with black peppercorns and sea salt, but no smoked paprika like you would find in chorizo. This allows the full flavor of the pork to shine through. It is in the same family to a fine Italian salami. As each salchichón cures over several weeks, the flavors blend and the pork is transformed into an exceptional sausage.

Spain has the finest pork in the world - Ibérico de Bellota. The special Ibérico pig only comes from Spain and is perfectly adapted to its life in the countryside. These lucky animals spend most of their lives grazing in family groups across the dehesa rangeland. In the fall, they feast on rich acorns (called bellotas in Spanish), sometimes gaining 10 pounds per day! This amazing diet, along with lots of activity, marbles the pork with healthy fats that make Ibérico de Bellota so exceptional.

Covap is Spain's largest cooperative, with thousands of farmers coming together to share the bounty of their work. Based near Cordoba in southern Spain, the Cooperative of the Valley of Pedroches (Covap) preserves the traditional way of life for farmers and protects the beautiful dehesa rangeland of the region.

Slice this sausage thinly and serve at room temperature with a glass of great Spanish wine. You can make a delicious bocadillo sandwich with a small loaf of rustic bread and thin salchichón slices.

Store in a cool, dry place and serve within a few days.
