Chorizo criollo is the classic grilling chorizo of Argentina. Seasoned with wine, fresh garlic, paprika and other spices, the people of Argentina adapted the original Spanish sausage to their climate and culture.
Our sausage maker learned this authentic recipe from his family in the Province of Cordoba in the heart of the Humid Pampas of Argentina. There they live a simple traditional life, with no stores nearby, and prepare handmade sausages to be enjoyed and sold in town. Now you can enjoy this old fashioned recipe in your home.
Whole cuts of humanely raised pork are chopped by hand for these sausages, with no scraps or offal, making the quality even higher than the farmhouse made chorizos in Argentina. Chardonnay white wine, garlic, paprika and sea salt add the authentic taste. Grill until sizzling hot and serve with good bread and a bottle of wine.
Each package will contain 3 to 4 chorizo criollo sausages. Keep frozen until you are ready to use, and thaw in the refrigerator.
