Huacatay, or Tagetes minuta, is an herb that grows in the Andean countryside of Peru and Bolivia. Sometimes called black mint, huacatay is related to tarragon and marigold but its pungent aroma is similar to mint and basil.
Huacatay has been a part of the Peruvian and Bolivian cultures since Incan times and it is still one of the first herbs chosen to enhance dishes in these regions.
Made by Doña Isabel, Aji Huacatay is a combination of aji amarillo yellow peppers and huacatay. Aji amarillo peppers have a spicy yet sweet flavor and are also one of the most important ingredients in Peruvian cuisine.
This spicy, flavorful sauce is a great choice for many types of dishes. Use it alone as a spread or mix it with chopped tomato and onion for a sauce with true Andean flavor. It's also wonderful spicy, aromatic marinade for meats and fish.
