The secret to this bacon's flavor is the free-range, acorn-fed Ibérico de Bellota pork only found in Spain. This diet of sweet acorns makes the fats in Ibérico de Bellota pork antioxidant-rich, more like extra virgin olive oil than any other fat. This bacon will literally melt in your mouth.

We import whole Ibérico de Bellota pork bellies from Spain and send them to a small smokehouse in Kentucky. There the pork is hand-rubbed with salt and slowly smoked over hickory wood. The result is the perfect marriage of flavors, nutty, smoky and meltingly delicious.

A little background on Ibérico de Bellota pork - Ibérico pigs are native to Spain and are found nowhere else. The luckiest Ibérico pigs live an idyllic life on the dehesa forests of southwest Spain, where the feast on huge amounts of sweet acorns, 'bellotas' in Spanish - thus their pork is called Ibérico de Bellota. The combination of free-ranging exercise and a rich diet of antioxidant-packed acorns make this the finest pork in the world.
