In yesterday's blog, I mentioned that my guests and I feasted on an incredibly delicious paella while vacationing at Skylands, my home in Maine. I thought it would be fun to show you a step-by-step of the process. For even cooking, it's important to use a traditional paella pan, which is round and flat with shallow sides. I purchased the giant one in these photos at an amazing store in the Soho section of Manhattan called Despaña, which offers the finest products from Spain.
