Tortilla Española

Tortilla is one of Spain's great comfort foods, enjoyed in every corner of Spain. Tortilla is a pleasure, whether served warm from the pan as a meal or hours later as a snack. At its most basic, tortilla española is simply sliced potatoes, eggs and olive oil. Variations add diced Serrano ham, chorizo sausage, or onions.
