A cooperative of small, artisan producers in the southwestern region of Jerez pool their grapes and resources to produce this stunning vinegar. After the grapes are pressed, the juice is fermented and then aged in barrels, with small amounts being transferred from barrel to barrel, the same Solera system that sherry producers use. A small amount of condensed grape must is also added, to enhance and smooth out its flavor.
Just as Pedro Ximenez, also known as PX, sherry wines are famous for their dark color and sweet flavor, this vinegar has some of the same sweet undertones and nutty, caramelized aromas. The flavor comes from the grape itself, also called Pedro Ximenez, which ripens deeply in the hot Spanish sun and develops intense sugars.
