This rare old vinegar was previously a private reserve for use by the Hidalgo family. This is a seldom seen seaside version, originating with wines destined for the production of Manzanilla – the most elegant and fragrant of pale sherries. El Molino Real vinegar displays a more complex, refined character than is typical of other sherry vinegars, which are generally known for their strength and pungency. Due to its inherent delicacy, El Molino Real is balanced, not harsh. The Hidalgo Family selects oak casks for aging El Molino Real after five years’ minimum use in the maturation of fine Oloroso Sherry – a barrel traditionally coveted for the burnish of textural and aromatic smoothness they impart. The result is an intermingling of fruit intensity, maturity and exotic spice suitable for use in the finest recipes. In addition to brightening fresh salads, El Molino Real adds the secret touch to split pea and lentil soups, and it is essential to authentic gazpacho. José Pantaleón Hidalgo entered the wine trade in 1792, founding the firm that has been passed from father to son for six generations. The company continues to occupy its original premises in the center of Sanlúcar de Barrameda.
