Grelos, or dried young turnip greens, are so highly prized in northwestern Spain that their production is protected and preserved by the European Union. These flavorful, slightly spicy greens are the main ingredient in the local soup, caldo Gallego. This dried version is the secret to producing this spectacular soup in the comfort of your own home. Grelos can be used in soups, stews, in pasta or scrambled with eggs.
Our Grelos are grown organically in the town of Ulloa. Young greens are harvested before the plant flowers, while they’re still flavorful and not bitter. They’re dried slowly, to preserve their flavor, and simply need to be soaked quickly before cooking with them. This version, grelo blanco, is among the most highly prized varieties.
Grelos are packed with vitamins and minerals, as well as iron. To prepare them for use, soak them in fresh water for 30 to 45 minutes.
You may have spotted these greens in their fresh form in the markets of Santiago de Compostela. They’re a delicacy in the region, used to make the traditional caldo Gallego, a hearty mix of ham and beans with the delicate greens.
