Judías verdes planas are long, flat green beans enjoyed in many Spanish dishes. Most typically they are cut into two inch pieces and added to paella, or sautéed with Serrano ham, among many other recipes. Our judías are grown by a farmer in the U.S. from Spanish seeds (he also grows our Padrón peppers).
Judías verdes beans are enjoyed across Spain and are one of the country’s most popular vegetables. Once cooked, they are very tender with a bright vegetable flavor. To prepare them, clean as you would any green bean and cut into pieces. They can then be steamed, sautéed or added to soups and stews. We find that they add a festive touch to our paellas. And they make a delicious side dish sautéed in olive oil with diced jamón Serrano.
These beans are available in the late summer, roughly from August until October.
