These spicy-sweet little peppers are a favorite treat in the Basque Country.
The thin green peppers are picked early and packed in white wine vinegar creating a tangy and perfectly spicy treat. (They have the heat of something like a banana pepper but they are more delicate and complex.)
They are a favorite with guests. We find that they disappear very quickly and pair perfectly with a good cheese and a crisp white wine.
Guindilla peppers, wine vinegar, salt, citric acid as acidulant and ascorbic acid as antioxidant.

"The peppers were slightly disappointing in that they are very mld tasting. Their color,texture and remarkable packing in their jar, is good. I simply expected more flavor ,and have poured a little olive oil on them when serving."

"These are insanely good! If you like anything pickled with a little kick, you will love these. I ate the entire jar in two days. They are pickled in white wine vinegar, which adds a complexity to them to make them taste even better than most pickled products. "
