Pimientos de Padron are amazingly tasty, tiny fresh peppers originally from a medieval town in Galicia, northwest Spain. Fried and sprinkled with sea salt, they have a delicious flavor and most are mild. But every once in a while you will bit into a spicy pepper - the reason the New York Times coined them "Spanish Roulette!"

People flock to tapas bars across Galicia to savor a plateful of these unique peppers lightly seared in olive oil, and then sprinkled with sea salt. Their fame has spread throughout the rest of Spain – and now to America!

What makes these little Padron peppers unique is that randomly you will pop a spicy one in your mouth! Since there is no way to distinguish the one from the rest which are sweet, you never know when you will get a surprise. In Galicia they have a saying: "Los pimientos de Padrón, unos pican y otros no", basically translated as "Some are hot and some are not." A New York Times writer calls the experience "Spanish Roulette!"

We in Virginia are on the same latitude as the village of Padron, so we asked a local farmer if he could recreate this treat by planting imported seeds.

His effort has been a total success. The pepper plants grown in the rich Virginia soil are identical to those grown on the parallel Atlantic shore - in the Rias of Galicia!

Every couple of days during the growing season here in Virginia, our farmer hand-picks these small, crisp peppers. Following the tradition of the farmers of the village of Padron, he selects only the small young peppers, because the larger, more mature peppers are always hot. The following morning we receive these fresh peppers and send them on to you!

"What can I say! This is the thing I miss most from Spain. When I'm back on Spain, the first thing I do is buying a Jamón like this and eating it all. Export proccess is quite complex, you have to pay for that. This Jamón needs an experted cutter, otherwise you will destroy it. If you want to learn cutting Jamón I recommend first to try with a non-Iberico (and cheaper) variety."

"While traveling in Spain, and when actually within the walls of Avila(!), we purchased these from a small confectioner's shop fresh right off their charming shelf. Half of us enjoyed, half did not--perhaps it's a personal and/or acquired taste, perhaps we received ours that day so fresh that perhaps they were too soft(??). I feel the "shipped" ones may actually have a slightly firmer texture, making them more enjoyable. Will look forward to ordering & trying!"

"As a grower of the padrons, customers need to realize two realities. When we have a hot summer the peppers will be hotter. The larger the pepper the hotter the pepper. Ideally, the pepper should be picked while still small, picked daily, and be aware of peak heat in the summer. Hope this helps."

"I ordered them this year in time for Labor Day. I must say that most of the peppers were too spicy. I have ordered in the past, and true to form, most are not spicy. This year we were unable to consume most of the peppers because they were just too spicy. Different distributor used perhaps by Lat Tienda? Not sure what happened. The preparation was the same as last year. We were left disappointed. "

"My husband had to taste each one for me to see if it was hot or not. I am extremely discomforted by hot capacin. In Spain they were not hot at all. The ones that are not hot are delicious"

"Peppers arrived in short amount of time and in perfect condition. They cooked up as directed but the ratio of hot ones was totally wrong. Practically every one was way too hot and we had to stop eating them. I still have some uncooked but don't think I will use them due to this problem. In Galicia there is usually just one or two hot ones in an order of about twenty or twenty five."

"What a fun treat! These arrived in such a fresh state of yumminess, that I almost hated to saute them...but I sure am glad that I did. "This site piqued my interest since I am a HUGE FAN of Spanish paprika and Spanish dishes.... I ordered these PADRON Peppers (fresh) because I really like all sort of peppers from mild to hot (not TOO HOT please). they arrived at my home in Wisconsin in styrofoam and freeze-bags along with some spanish cheese... they were looking REAL GOOD! On the lid of the PKG was a simple recipe: Fry in olive oil, add salt... enjoy. THESE ARE VERY TASTY PEPPERS and the QUALITY i recieved were EXCELLENT! Thanks! "My box of pepper came in great shape, they all looked very fresh. I love the way La Tienda packs there packages. The only thing for me was that when I started eating them my first one was sooo hot I had to run for the ice cubes, and a lot of bread. So I said, oh I got the hot one already, but 75% of them were very hot, I was very disappointed. I have had these in Spain for many years and they r not supposed to be all this hot. Maybe I got a spicy bunch. I would have to try again. They ones that were not hot were very tasty."

"Received these yesterday. Well packaged in a Styrofoam cooler with a sealed ice pack. They arrived in excellent shape looking totally unstressed.
