Anchovies are typically harvested each spring when they have accumulated the most fat and flavor. These Arroyabe anchovies are caught with small nets to protect the quality of the fish and to reduce by-catch. Once caught, the anchovies are hand cleaned and placed in barrels where they are aged for 3-7 months.
