Anchovies are both a traditional food of the Basque Country and the mainstay of the region's fishing economy. Anchovies are typically harvested each spring when they have accumulated the most fat and flavor.
These Arroyabe anchovies are caught with small nets to protect the quality of the fish and to reduce by-catch. Once caught, the anchovies are hand cleaned and placed in barrels where they are aged for 3-7 months. After aging, the fillets are washed, boned and hand packed in olive oil to preserve the flavor and texture of the fish.
These are high in Omega-3 fatty acids, which are thought to help prevent cardiovascular disease and to help reduce cholesterol.
Wrapped around a slice of artisan cheese, anchovies make a great tapas dish. They can be also be served on crusty bread with piquillo peppers or on a salad drizzled with Spanish olive oil and aged sherry vinegar.
