Los Peperetes is one of the finest examples of a long Spanish tradition of canning gourmet seafood. Unlike in other parts of the world, Spaniards have just as much respect for canned seafood as for fresh, especially for the fish and shellfish of Galicia. Their tiny company painstakingly prepares each batch, choosing each mussel, clam or sea urchin by hand to make sure that it is the finest in the world.
Sea urchin roe is prized around the world, in Europe, but even more in Japan and Korea, where it is called uni.

"The flavor was good, however, the texture was not great. It was almost spongy rather than soft and melt in your mouth like other sea urchin roe I've had."
"This was my first experience with urchin roe, and I had some concerns about buying canned rather than fresh. No need to fret, I had absolute raves about the dish I made and plan to experiment more. For my first taste, I made a light cream sauce with garlic and red pepper, adding the roe at the end with just enough time to warm it through. I used the sauce to top lobster raviolis and garnished it with shrimp sauted in garlic and butter. Totally successful!!"
"The briny flavor was present as advertised. However, when eaten as is, the buttery texture and fresh flavor fell short. The Caviar was crumbly and fell apart in the mouth. The flavor had no depth. Had to keep reminding myself this came from a can and not sushi grade. Wonderful when mixed with Paella during the last seconds of cooking time...adds a classy flavor to the dish! Your mileage may vary."
