These large, plump clams are harvested from the pristine sands of the Rias Gallegas, deep inlets in the shores of Galicia.Once these rare clams are harvested, they are quickly poached in sea water, then cleaned by hand. Only the largest, in-tact clams are then placed one-by-one in the cans.
