'Bonito del Norte' Tuna is line-caught and packed by hand. The packers at Serrats include a whole Piquillo pepper, (a sweet and tangy fire-roasted pepper unique to Spain) and then top off each jar with olive oil, to keep the dense white bonito moist and mild. It is a perfect marriage of tastes.

The Serrats fishermen catch the bonito by individual line, never by net where it could languish, along with turtles and other sea life.
