'Bonito del Norte' Tuna is line-caught and packed by hand. The packers at Serrats include a whole Piquillo pepper, (a sweet and tangy fire-roasted pepper unique to Spain) and then top off each jar with olive oil, to keep the dense white bonito moist and mild. It is a perfect marriage of tastes.

The Serrats fishermen catch the bonito by individual line, never by net where it could languish, along with turtles and other sea life. The bonito is brought aboard and immediately dressed, thus preserving its remarkably firm texture and fresh flavor.
