Words can't describe how incredible these anchovies are - tender, silky, delicate, with a complex flavor that carries you to the cool fresh waters of the Cantabrian sea. True Cantabrian anchovies are the finest in the world, and these have been given the royal treatment.

Each fish is carefully filleted by hand, salted, then placed one by one in each tin and covered in extra virgin olive oil. This ensures that each fillet is bone-free and not bruised by more hurried mechanical processes.  (more info)

Each fish is carefully filleted by hand, salted, then placed one by one in each tin and covered in extra virgin olive oil. This ensures that each fillet is bone-free and not bruised by more hurried mechanical processes.

They are then cured in the extra virgin olive oil for 8 months to allow it to penetrate the fillets. The result is a supremely delicate and tender, with a mild, complex anchovy flavor.

This is the Ortiz families finest product and is labelled the 'Reserva de Familia'.

We recommend enjoying these anchovies simply so as not to mask their flavor. Serve them on toasted crusty bread, wrapped around pieces of artisan cheese, paired with piquillo peppers. Make them the star of a simple salad by laying whole fillets in a circular pattern on top and drizzling with olive oil and vinegar.  (less info)
