Our boquerones with garlic and parsley are the same delicate fish you’ll find in the pintxos bars lining the streets of San Sebastián. Tender and mild, these silvery cured anchovies are not salty at all. Once you taste one of these pleasing little fish, you’ll understand why they’re a favorite among Basque locals!
When we visited the Yurrita family’s facility in the heart of Basque country, we understood why their boquerones are some of the best. The freshly-caught fish are quickly filleted by hand and packed by hand in olive oil and vinegar. Slivers of garlic and parsley are also added, complementing the flavors of the fish nicely.
If you’re preparing for a night of tapas, these little fish are an essential. They also make a great addition to salads and canapés.
Keep boquerones refrigerated and eat within a few days of opening.
