Boquerones white anchovies are delicate and mild, and quite distinct from full-flavored salty anchovies. These velvety fish are tender and nicely tart because of their oil and vinegar marinade. This version includes cayenne pepper for a little added spice. They are a classic tapa across Spain, and are typically served wrapped around olives or paired with roasted peppers on a canapé. We like to nibble them on their own with a nice crisp glass of white wine.

Boquerones are the fillets of fresh anchovies plucked from the Atlantic. The delicate fish fillets are added to vinegar which immediately cooks or "pickles" them. You’ll be pleasantly surprised by how close these fish are to the tapas along the seaside towns of the Basque!

The Yurrita family began harvesting and curing anchovies in 1867. Their expertise has grown from generation to generation, and today they produce some of Spain’s finest boquerones!

These boquerones are filleted by hand and lightly salted before they’re packed in a luscious mix of olive oil, vinegar, and a bit of chili powder. The invigorating touch of spice isn’t overwhelming.

We suggest spearing each one with a toothpick or a palillos and serving them by themselves to savor the fish alone! You can also wrap them around plump Manzanilla olives, or serve them on hot toasts with a drizzle of extra virgin olive oil.

Keep them refrigerated and enjoy within a day or two of opening.
