Boquerones are anchovy fillets that are preserved in vinegar, as opposed to salt like typical anchovies. This means they are not salty at all, and are much flakier, more delicate meat. They are delicious served on their own, but they can also be wrapped around olives or cubes of cheese and skewered for a great flavor combination.
Our friends at Lorea start with freshly harvested anchovies from the Cantabrian sea. The anchovies are cleaned by hand, then immediately placed in a mixture of white wine vinegar, extra virgin olive oil and sea salt.
