Delightful Langostinos are famous across Spain for their sweet, delicate flavor. Our friend Miguel took us to a famous restaurant in Jerez with a frozen package of langostinos under his arm. There the chef prepared them as if they were fresh from the sea. Astonishingly, they were better than any we had eaten before!
Our langostinos are from the Sanlúcar de Barrameda region in Cadiz. Near the mouth of the Guadalquivir River they are live-caught in fine nets, then carefully stored so that they are still moving when they are flash frozen. This painstaking process preserves their full flavor, and is the reason they are so costly, even in Spain.
Traditionally served with heads-on, langostinos are best boiled whole and chilled in icy saltwater, then served cold with a very cool glass of sherry. They can also be cooked 'a la plancha' on a griddle with olive oil and sea salt or grilled over a wood fire. However you choose to prepare them, langostinos will fill your room with the aromas of the fresh, briny waters off of Sanlucar de Barrameda.
