Made simply of oil, garlic, lemon and salt, this is essentially a gourmet garlic mayonnaise, a staple in Catalunya, in the north-east of Spain.
In one form or another, it can enhance just about anything - seafood, paellas, soups, stews, pasta, vegetables, etc. For the Catalán ali-oli, most of all, is essential to grilled meats, especially pork and chicken.
Strictly speaking, Catalán purists insist ali-oli is made solely of oil and garlic, as it was in the time of Pliny the Elder (AD 23-79) who served as Roman Procurator in Tarragona.

"As a Catalan I should said that this All i Oli is really accurate recipe and taste really good. Perfect for fideuà (It's a soft all i oli with not to strong garlic flavor). Also a great base for making the salsa brava."
