Mojo Verde Picante – Spicy Green Mojo - is made of essentially the same ingredients as Mojo Picón. It is a blend of garlic, bell peppers, olive oil, vinegar, cumin seed and salt. But the spicy 'picona' peppers are replaced by parsley - which produces the characteristic green color.
Its consistency is less uniform than that of the mojo picón and is very concentrated. You may want to dilute it with some extra virgin olive oil or vinegar.
Mojo Verde Picante enriches the full spectrum of meat dishes as well as deepening the flavor of soups and stews.
This popular sauce from the Canary Islands is often served with potatoes and fresh fish, either fried or boiled, although it also goes perfectly with roasted chicken.
