Angel and Cristina actually fry plump ripe tomatoes in extra virgin olive oil in a vast paella-type pan, simmering them very slowly over a low flame for over eight hours! This is the only way to produce a rich flavorful tomate frito that maintains all of the properties of the tomatoes.
