Our artisanal saffron is a labor of love harvested by Maria Ángeles and Juan Antonio Serrano. On just ten acres, they grow crocuses, from which they collect the saffron when the flowers bloom. They prune and toast each day’s harvest to preserve its pure crimson color and intense flavor. The family typically produces under 50 pounds per year, a tiny harvest of the highest quality.
Princesa de Minaya saffron is protected by the "Denomination of Origin La Mancha" label, a seal of approval for its quality and provenance. It’s also awarded a "Category 1" in quality, the highest accolade for color and flavor.
To release the full flavor of saffron before adding it to paella or soup it is best to grind it into a fine powder, so we included a traditional mortar and pestle. Place the saffron into the ceramic mortar and crush it with the beechwood pestle. "Rating is of the mortar & pestle(!). If it is the one in the photo, it is great. This is the 'classic' one that is most commonly found in Spanish kitchens. I've used many different ones, and this is by far my favorite. It is very solid with a hard glazed finish."
