Moroccan cooking has influenced Spanish cuisine for over 1,000 years. The tagine is the most common and entertaining way to prepare Moroccan food, and here’s the perfect kit to help you get started! We have included some of our favorite ingredients, plus a handmade terracotta tagine and a cookbook by James Beard Award-winner, Paula Wolfert. With this expert selection, you’ll be able to prepare this flavorful dish famous around the world!
The tagine is a special type of cookware used for slow-cooked stews and vegetables. Its conical lid captures steam rising from the food as it cooks, dripping back into the stew so it stays moist, turning lamb or beef into tender bites!
While the tagine will work its magic, it helps to start with a good recipe! We included the ultimate companion, Mediterranean Clay Pot Cooking by Paula Wolfert. Once called "America’s Queen of Mediterranean Cooking," Wolfert is a quite a fan of the tagine, believing it adds an earthy sweetness you won’t find with other methods of cooking.
To cook her recipes, we’ve included some of Spain’s finest ingredients. Princesa de Minaya saffron, harvested and toasted by hand in La Mancha, is prized as the highest quality available. With its flaky crystals, hand-harvested smoked Flor de Sal sea salt is the perfect finishing salt. Our Gordal olives, are a savory addition to any dish. Fire-roasted piquillo peppers from Lodosa add vibrant flavor, with a hint of smoke and spice. On the sweeter side, we’ve included orange blossom honey, harvested from Spanish orange trees visited by five generations of beekeepers!
We also included a bottle of Can Solivera extra virgin olive oil. This luscious oil is produced from arbequina and empeltre olives and it has a light and fruity flavor.
This kit will help you transform fish, meats and vegetables using the tagine. While simple, this style of cooking produces some of the most flavorful and tempting dishes in the world. Best yet, here you have the recipes and seasonings to master this celebrated dish!
