Smoky Pimentón de la Vera paprika. Pungent saffron. Piquant 40-year sherry vinegar. Spanish cuisine is full of complex flavors, and we’ve brought our favorites together with this starter kit for the inquisitive chef.
The most luxurious flavor is our saffron. Hand-harvested from crocus flowers and toasted to draw out its flavor, this prized spice comes from La Mancha where the best saffron is grown. Our Princessa de Minaya is the highest grade in the world.
Our Pimentón de la Vera, or smoked paprika, is made by Spain’s first and best producer, La Dalia. In the countryside, they smoke hand-harvested peppers for fifteen days over local oak logs, for an intensely smokey flavor and a deep red color.
We’ve included sea salt with red wine and spices, hand-harvested from the ancient salt flats near the Bay of Càdiz - famous since Roman times for the quality of its salts. These salts are tended by a fourth-generation farmer. It’s a perfect secret ingredient to meats and stews!
Another kitchen essential is olive oil. This isn’t just any bottle, but an unfiltered extra virgin olive oil produced in tiny batches from ripe Arbequina olives and cold-pressed a beautifully aromatic oil with flavors of melon and fresh cut herbs. It is the perfect partner to our 40-year old sherry vinegar from El Puerto de Santa María, aged in the solera manner in oak barrels.
