Pimentón smoked paprika is an essential ingredient for authentic tasting paella. But more than that, you will find this smoked paprika is excellent for general cooking at home. It may be used as a flavoring for potatoes and fish dishes, light stews, sauces, garlic chicken and roasted meats.

Each type of pimenton has a subtly different flavor: sweet, bittersweet, and picante - spicy. If you like to be creative with your cooking, you will find distinct uses for each of the three. Please do not confuse this paprika with the bland paprika you get at the local supermarket -- or even with the traditional Hungarian paprika. The peppers used to produce all three varieties of Pimentón de la Vera are meticulously hand-harvested in early October and sent to warehouses where they are slow-smoked for fifteen days.

The whole peppers become saturated with the smoke of smoldering oak logs, adding intense flavor while preserving their natural blood-red color. After being stone-ground into a velvety powder, the pimentón is shipped directly from the La Vera valley to La Tienda to ensure freshness.

El pimentón es un ingrediente esencial de las paellas de sabor auténtico. Pero más que eso, descubrirá que este pimentón es excelente para cocinar en casa en general. Se puede usar para sazonar platos de patatas y pescado, guisos ligeros, salsas, pollo al ajillo y carnes asadas.
Cada tipo tiene un sabor sutilmente distinto: dulce, agridulce y picante. Si le gusta ser creativo en la cocina, encontrará muchos usos para cada uno de ellos. No confunda este pimentón con la 'paprika' sosa que le venden en supermercado, ni siquiera con la tradicional húngara. El pimentón tiene un sabor mucho más profundo y un aire definitivamente ahumado.

Los pimientos que se usan para producir las tres variedades del pimentón de la Vera se recolectan meticulosamente a principios de octubre y se envían a almacenes donde se ahuman lentamente durante quince días.

Los pimientos enteros se saturan con el humo de grandes troncos de roble, añadiendo un sabor intenso mientras preservan su color rojo sangre natural. Después de machacarlos a la piedra hasta conseguir un polvo aterciopelado, el pimentón se envía directamente del valle de La Vera a La Tienda para conservar su frescura.   (less info)
