This celebrated cold pressed olive oil has been produced in Andalucía since 1793, at the same time as George Washington was president!Francisco and Andrés Núñez de Prado are the seventh generation at the family estate in Baena, Córdoba. Their premier extra virgin olive oil is a blend of three varieties of olives - picudo with its fresh aroma, picual for long shelf life and stability, and the sweet, smooth hojiblanca.
This coveted oil is completely hand crafted and extracted from the first crush when the olives are ground to a paste between granite rollers.
Unlike the usual first cold pressing, this paste is neither centrifuged nor pressed. This Flor del Aceite 'Flower of the Oil' is solely the oil that flows naturally out of the olives during the grinding process. Vitamins and unsaturated fatty acids are still retained to a large extent.
The Núñez de Prado Early Harvest olive oil is made from olives that were hand picked a little earlier than normal - when the olives are green and just starting to turn violet. The 2008 Early Harvest oil is of exceptional quality with fruity and floral aromas of green, apples, lemons and a touch of peppery bitterness. Only 55,000 liters of oil were selected for the 2008 Early Harvest bottling.
This extraordinary unfiltered oil has an acidity of 0.2 percent -- five times lower than that required to be labeled extra virgin.
Núñez de Prado is bottled without filtering to preserve its full flavor and aroma. Because it is unfiltered, some sedimentation may occur at the bottom of the bottle.
King Juan Carlos selected Núñez de Prado to present as a special gift to the President of the United States and his staff. The earthy yellow color comes from the soils of Andalucía. Some people have called it the Rolls Royce of olive oil.
