They have included a vial of their finest Pedro Ximenez sherry wine vinegar for you to enjoy. It is made from Pedro Ximenez grapes which have been allowed to remain on the vine until much of the original acidity has ripened into natural sugars.
The result is a full bodied sweet and tangy vinegar, which can be used interchangeably with any balsamic vinegar applications.
The olive oils the family has selected are all single fruit oils from olives of the same name:
-Arbequina - Notably fruity flavor, with a taste of sweet green grass, apple and a little nut (excellent for dressing fresh or grilled vegetables, rice and certain acid fruits such as natural pineapple, etc.)
-Hojiblanca - Very smooth flavor, a little sweet, with a touch of 'green wood' and oily 'aftertaste'. Specially recommended for gazpacho, tomato salad, meat, meat stews and blue fish.
-Picudo - Marked olive flavor, slightly spicy, with a little bitterness, nutty flavor and a very slight 'butter' touch. Highly appropriate for carpaccio, pasta and white or soft blue fish.
