Altramuces are salty, crunchy little beans and a classic bar snack in Spain. They are flat, coin shaped beans with a nutty, salty flavor that pairs well with your favorite beer or dry sherry.
Altramuces, or lupin beans, are salty like preserved olives and have a texture similar to a firm olive. To eat them, make a small tear in the skin of the bean with your teeth and pop directly into your mouth. The more you eat, the more adept you'll become at popping them open! Lupin beans are the seeds of the Yellow Lupin plant and they are similar in size to lima or butter beans. Of all the legumes, they are second only to soybeans in protein. Nowadays they are most commonly consumed as a snack food across the Mediterranean.
