Papa a la huancaina, or Huancayo style potatoes, are a classic Peruvian salad made with yellow potatoes topped with rich, creamy huancaina sauce. Made in Peru with aji amarillo peppers, our huancaina sauce mix is an easy way to recreate this Peruvian favorite at home in just minutes.
Typically served cold as a starter or side dish, papa a la huancaina is made with boiled yellow potatoes similar to American Yukon Gold potatoes. The potatoes are topped with spicy huancaina sauce and served with lettuce and a garnish of black olives, corn and sliced hard boiled egg. Because it is served cold, Huancayo style potatoes are a favorite for picnics and parties in Peru.
To make this creamy sauce at home, pour the mix into a bowl and add 1 cup of milk (preferably evaporated milk) and 1 teaspoon of vegetable oil. Mix until smooth and serve with boiled potatoes. If desired, garnish with lettuce, hard boiled eggs and olives.
