Often called manzano peppers, rocotos are medium sized red peppers grown in the region surrounding the Andes Mountains. Commonly served in Peruvian, Bolivian and Ecuadorian cuisine, rocoto peppers have a complex, spicy flavor with some tropical fruit undertones.
