The ham masters at Monte Nevado reject any short-cuts in creating their all-natural hams and follow age-old methods of curing. Rather than compromising the natural flavor by adding nitrates to speed up the process, Monte Nevado invests more time for the hams to cure in the sea salt. Each ham is cured at 3,300 feet in the fresh dry air of the Sierra de Cameros for a minimum of 15 months, a tradition they have continued for four generations. |
