This limited production ham is produced in Surry Virginia, famous for artisan hams. It is cured in the Spanish tradition, then smoked to add a little new world charm!
It is a wonderful blend of the two traditions. This unique ham is made using heritage Berkshire pork, a fattier breed which lends the ham more flavor. Each ham is cured for a minimum of 400 days.
