If you prefer to slice your own Serrano ham, but a whole ham is just too large, this center cut of imported jamón is the perfect solution.
Aged for over 18 months in the mountains of Spain, this is a true Jamón Serrano. This perfectly cured center piece is easy to slice, either by hand, or in a mechanical slicer. You can also cut or dice any amount you would like for Spanish recipes, like stews and cocidos.
This Spanish ham is fully cured and ready to eat. Once opened, store in the refrigerator carefully wrapped in plastic wrap. If stored for a while it may get a small amount of mold cover, simply slice this away and the rest of the ham will be fine - remember that this penicillin like mold is part of the curing process.
To slice in a mechanical slicer, we suggest you thoroughly chill the jamón to allow for very thin slices.
