When we first bit into this cake from family-run Ecoficus, we were astonished by its remarkable flavor, a perfect balance of figs with crushed almonds, lemon and cinnamon. When we found out they grow the organic figs themselves, a special variety called 'calabacita' that are particularly plump and sweet, we knew we’d really found a cake to savor!
At family-run Ecoficus, flavor is their focus from farm to kitchen. They grow the figs organically on their farm, Los Llanillos, outside the village of Almoharin in Cacéres. This ancient town was once the great divide between Arab territories to the south and the Christian kingdom of the north. The Arabs brought fig trees with them, and Almoharin became known as the city of trees.
In the heart of the hot Extremadura region, fig trees produce particularly sweet, plump figs. The calabacita variety is no exception, and its tiny fruit are prized around the world. It’s no wonder that, when these sweet figs are mixed with almonds, herbal liqueur, cinnamon and grated lemon peel, the resulting confectionary is out of this world. We hope you’ll agree!
This almond-studded cake makes a lovely not-too-sweet dessert. It’s also a great accompaniment with cheese, especially alongside a sharp Manchego or Ibérico cheese. Ecoficus makes entertaining easy: just remove the vacuum-sealed package and you’ll have a remarkably fresh, full-flavored cake on the table in seconds.
