- Great for grilling and paella - Traditionally from Navarra and the Basque region - Try sautéing in wine or beer! Chistorra chorizo sausage originated in the Basque Country. It is made of lightly smoked lean pork and lots of sweet Pimentón de la Vera paprika. This version is softer than our other chistorra, perfect for grilling or sauteeing. You can also cook them up with eggs in the morning, or add them to soups, paellas etc. Made in the US from a Basque recipe. About 1/2 inch thick.
