This is Chistorra, the versatile thin sausage that can be diced and served with eggs and peppers in the morning, or simmered in wine or beer and served as a tapa in the evening. Chistorra chorizo sausage originated in the north of Spain, and is considered the national sausage of Navarre and the Basque country. It is made of lightly smoked pork, garlic and lots of sweet Pimentón de la Vera paprika.
