These little chorizos are great as a breakfast sausage. Later in the day you can serve them as a cocktail tapa - just as they are, or grilled on a skewer. You can also sauté the 'cantimpalitos' mini chorizos in beer, wine or brandy. The 'mini links' make a nice garnish for paella. There are about 40 per package.

The recipe, discovered by a Spaniard now living in America, is typical of the classic chorizo found in the town of Cantimpalo in Old Castile. (more info)

It is seasoned with imported Pimentón de la Vera, smoked paprika which is harvested in a neighboring town. It lends a special flavor that is unique to Spain. These ‘cantimpalitos' are made in America with imported Spanish spices.

"For paella there is nothing better. The size, the "chew" of the natural casing and the flavor combine to make this another item I order and reorder from La Tienda. The chorizo is not greasy but tastes splendidly "porky" and it rounds out the flavor of either of my two favorite paella dishes: chicken or prawn. The pimenton flavors are just right--a bit smokey and a bit sweet. I have ordered other chorizo from other fine Spanish-American makers but this one works best for me. Of course, it beats the "supermarket" varieties with their oily, overly-spiced and peppered qualities. This one is worth paying the shipping for."
