Soria chorizo is in a class by itself. Rather than being composed of ground ingredients,alone, it has large chunks of lomo pork loin throughout - lots of solid ham flavor, and much less fat than typical chorizos.

The recipe comes from the medieval city of Soria, in Old Castile where some of the highest quality embutidos are created.

Like most chorizos, Soria is seasoned with paprika, sea salt, garlic and other spices. It is the lomo that makes the difference. (Peregrino Brand - U.S. made by a Spaniard)
