Soria chorizo is in a class by itself. Rather than being composed of ground ingredients alone, it has large chunks of pork throughout - lots of solid ham flavor, and much less fat than typical chorizos.
The recipe comes from the medieval city of Soria, in Old Castille where some of the highest quality embutidos are created.
Like most chorizos, Soria is seasoned with paprika, sea salt, garlic and other spices (Peregrino Brand - U.S. made by a Spaniard)

Pork, sea salt, water, paprika (pimenton) nonfat dry milk, sodium caseinate (milk protein), dextrose, garlic, spices, oleoresin of paprika, sodium erythorbate, sodium nitrite, potassium nitrate, lactic acid starter culture.

"Chorizo, chorizo, chorizo. I have to admit I was more than pleasantly surprised. This one is delicious and almost as good as authentic from Soria/Spain. Not as deliciously smokey and aged as the chorizos in Soria, but close enough. Salty, like it should be, but not over done. It is just right. Huge chunks of “lomo” meat inside and a lot less fat than your traditional chorizo. I love it. It is my favorite right now. Eat it by it self with some cheese and wine. I like a few thick slices heated on a pan with a splash of red wine, served with some crispy bread. Awesome!"
