Ovin is an artisan cheese from Nava in the northern province of Asturias. It is crafted from local milk from sheep, cows and goats and cured for 30 to 45 days in small wheels. It has a golden color and a mild creamy flavor. Because of the short maturation time, it lacks any sharpness and showcases the full, fresh flavor of sheep's milk.
