Derived from raw milk from Lacuna and Saloia sheep, Azeitao cheese roots extend back to cheese makers from Serra da Estrela who brought traditional techniques to the areas around the Arrabida Mountains. This particular semi-soft cheese is made with salt, milk and a local, thistle-like cardoon, which serves as a vegetable rennet instead of the animal-based or synthetically produced rennet often used. This more fickle, artisan method of cheese making gives Azeitao its unique earthy, herbaceous tones and a silky smooth texture.
