These classic cookies are some of the most popular pastries in Spain. Tortas de aceite were created in Sevilla nearly a century ago. Bakers adhere to the same traditional recipe, mixing flour and olive oil with a bit of sugar and anise. This particular version includes ground roasted almonds adding a rich crunchiness.
Each of these tortas de aceite starts as a ball of dough. This is patted and stretched by hand, and slid into the oven before it can shrink back to its original size. This elastic dough is the secret to the crispy, crunchy cookies. Because it is so tricky to make, the process was never mechanized and these cookies are created by hand to this day. We personally visited the group of ladies in Sevilla who carry on this tradition, which was a real pleasure!
