These flaky cookies come by their crispiness due to the Spanish olive oil in their dough. Artisan bakers still pat out each cookie by hand! Once the tortas come out of the oven, they’re wrapped in wax paper to keep them as fresh and flaky as possible.
This selection includes the classic tortas de aceite, a sweet cookie with hints of anise that was named in Saveur Magazine’s Top 100 List. We also included two savory tortas: crispy rosemary and thyme tortas are wonderful to enjoy with a slice of Tetilla cheese and a drizzle of honey, or even to dip in hummus. The sesame seed and sea salt tortas make a great accompaniment with jamón or any tapas spread.
