Impossibly crisp and flaky, these classic tortas de aceite cookies are one of Spain’s sweet treasures. These sugar–kissed crisps practically melt in your mouth with each airy bite. Here we offer three styles - the classic with sugar and anise, sweet Sevilla orange, and sugar cinnamon - all perfect with a cup of coffee or tea.
Over a century ago, a Sevilla local named Ines Rosales made a batch of these tortas de aceite, or olive oil cookies, to sell at the nearby train station. The delicate sugary wafers, with a dusting of anise and sesame seeds, quickly became a national favorite. Her business continues today, where local women roll out the dough and form each cookie by hand.
This selection includes three types of the famous tortas. Classic sweet tortas de aceite, sprinkled with anise, sesame seeds and sugar, were recently named in Saveur’s Top 100 list. Sweet orange tortas are sprinkled infused with delicious local Sevilla oranges, and the final version of these irresistible tortas is dusted with cinnamon sugar.
